One of the six original players in Bordeaux wines, Malbec is definitely the burliest, with inky dark color, robust tannins and rich, juicy plum-like flavors. These are backed up by blackberry and black cherry aromas, while an undercurrent of leather and gamey-earthy notes flirts with pepper and tobacco to draw out the finish.
South Americans know Malbec’s strength, and they serve it with spicy grilled meat of all kinds–lamb, venison, beef and pork–but it works equally well with robust spicy foods, especially Mexican Mole.
